Greens, Eggs, and Ham

Ingredients

2 Tbl Olive Oil
1 Leek, Chopped
2 Cloves Garlic, minced
1/8 tsp Red Pepper Flakes
1/8 tsp Salt
1/8 tsp Freshly Ground Black Pepper
4 Oz mixed greens (Spinach and Kale)
8 oz ham steak or 8 slices Canadian Bacon
4 Eggs
4 Slices English Muffin Bread or Other Rustic Bread

Preparation

Step 1

Heat oil over medium heat in a large skillet.  Saute leek, garlic, red pepper flakes, salt and pepper until leeks are soft.  Add greens to pan and cook until just beginning to wilt.  Set aside.

Warm ham slice or Canadian Bacon in a second skillet. While ham is warming, toast bread slices, and prepare a non-stick skillet to fry eggs.

Place Homemade English Muffin Bread (get recipe here) or toast(2 slices per person) on plates and top each slice with either 1/4 of the ham steak, or 2 slices of Canadian Bacon.  Divide greens equally on top of the toast and ham.

Crack each egg into the hot, non-stick skillet.  Add 2-3 tablespoons of water, cover skillet, and cook 2-3 minutes for runny yolks, or until yolks of eggs are set as you prefer.  Season eggs with salt and pepper to taste and place on top of the toast, ham and greens stack.
