Salsa Recipe


3 Medium sized fresh tomatoes
1 Red onion
1/2 jalapeño chile ( ribs, seeds removed)
Juice of 2 limes
1/2 Cup chopped cilantro
Salt and pepper to taste
1 Roasted red bell pepper
1 12oz can diced tomatoes
1 teaspoon Sugar
1 teaspoon ground cumin


Step 1

Place all of the ingredients in a food processor. Pulse only a few times, just enough to finely dice the ingredients, not enough to purée. If you don’t have a food processor, you can finely dice by hand.
Let sit for an hour for the flavors to combine. Serve warm over eggs or chill in the fridge for a dip.
