Sweet Potato Hash

Sweet Potato Hash


1 lb Sweet Potatoes, diced
3 Tbl Olive Oil
1 Tbl Kosher Salt
1 tsp Paprika
1 tsp Dried Thyme
1 tsp Onion Powder
1 tsp Garlic Powder


Step 1

Mix together salt, paprika, thyme, onion powder and garlic powder in a small bowl.  Toss diced sweet potatoes with olive oil and seasoning mix to taste.  You will not need all of the seasoning mix.  Fry sweet potatoes in a large skillet over medium-high heat until soft and beginning to brown – 15 to 20 minutes.  Serve hot with Greens, Eggs and Ham.
